You Little Devil

The WASP-iest deviled egg recipe around! Dates back at least 3 generations on the Forbes side of my family. Want to find some Republicans in Berkeley, CA? Look no further than my uncles. My lovely uncles have been known to eat at least 5 of these each as a complement to a holiday meal, with seemingly no effect on their subsequent appetites! Magic.



Here is the method with tips and tricks:

-Hard boil a dozen- ish eggs but don’t overcook because then they will be grey
-Peel, slice in half (the older the eggs the easier they are to peel, a sharp knife works best)
-Pop out yolks- don’t cry if a couple are ugly shells, those are the ones the cook eats
-Beat yolks with mayo (Best Foods Original is preferred) in electric mixer, starting with a heaping tablespoon
-Add 2 teaspoons Del Monte Sweet Pickle Relish! Try to get mainly pickles not too much liquid on your spoon
-It’s blasphemous but you could add a TINY squirt of mustard just for color
-Add more mayo and a dash of relish till you get the right consistency
-Stuff eggs and sprinkle with paprika (if you are bringing them somewhere, you may stuff them prior to serving at your party)
-Sprinkle with paprika
-Serve on a deviled egg plate- a house is not a home without one!
-Get whatever dishes have egg on them soaking in water right away; that stuff turns to glue when it dries
-EAT

I recommend an snazzy egg carrier like this one. I have
one that has different inserts for cupcakes, deviled
eggs, a fruit platter, etc. Love it!
